Meal Prep Monday … IN A RUSH Edition!

Oh hey life…didn’t see you there behind all that school


Clearly we’re big fans of changing things up and adding “editions” to boring old meal prep monday…we’re potentially borderline ADD.

Today we had one of those “hey we have people to impress with our wonderful food and we only have an hour to make everything” moments…. SO we decided to do meal prep monday IN A RUSH.

Now everyone’s probably currently thinking “wow this is probably going to be like canned soup and grilled cheese because no delicious food can come from only an hour of cooking time”. YOU ARE INCORRECT! (Although there was some initial doubt that we could do it… it has been confirmed that we are culinary super heros.)

The first thing on today’s menu is a SUPER simple turkey chili! πŸ™‚ Takes about 15 minutes to prep everything and then it cooks for 30 minutes.


Tablespoon coconut oil

Pound of ground turkey

1/2 Red Onion, chopped

2 Cups water

Can of crushed tomatoes

Can of kidney beans, drained and rinsed

Can of chick peas, drained and rinsed

Couple cloves of garlic, minced

2 Tablespoons chili powder

1/2 Teaspoon oregano

1/2 Teaspoon cayenne (or more if you’re a spice-aholic like us?)

1/2 Teaspoon ground cumin

1/2 Teaspoon Sea Salt

1/2 Teaspoon Black Pepper


1- Heat up the oil in a pot over medium heat, cook the ground turkey until evenly brown, then add the onion and cook it till it’s tender

2-Pour in the water…then add everything else…Bring to a boil…Reduce heat to low, cover and simmer for 30 minutes

We also figured that chili deserved a side dish!! SO we also made a little mixed salad with some baby kale and baby spinach, added some fresh green beans, carrots and some BEAUTIFUL cherry tomatoes and to top off that already delicious salad some pumpkin seeds! (secret addiction)

For the dressing it was a super simple apple cider vinegar and honey dressing!

1 part apple cider vinegar

3 parts olive oil

1 part honey

Some salt and pepper

Little bit of water to loosen up the honey a little bit

SO YUMMY! (plus you get the added bonus that apple cider vinegar is AMAZING for you… especially when added with dark leafy greens like spinach and kale – it helps you absorb all the calcium in those greens!!) You might even say that’s a DOUBLE BONUS?!

Work It Wednesday!

Well everyone…. this is just another wednesday under our belts! This week we decided to share another workout secret of ours that we found VERY effective and just a really great thing to add to your usual legs day workout that results in uhhhh crazy burning and potentially some crying… ? But that’s okay since we go to the gym when nobody else on the earth does so we can just whine to ourselves… well and each other. BUT NOW YOU CAN TOO!

SO! Introducing…. the monster additive to legs day (because legs day wasn’t awesome enough)…



(Standing calf raises) – (We both use different things to be honest… one of us uses the actual standing calf raise machine and one of us uses the seated leg press for it… to each their own! You could even do them using a step and just holding weights)

(We’re showing the weights that work for us… if you need to use heavier or lighter just adjust to what you do and just use relatively the same system!)

…There’s been a lot of side notes so far.

90lbs – Bottom end calf raises (Bring heels from the “relaxed” position to parallel) (12 reps)

70lbs – Full range 1 second calf raises (12 reps)

80lbs – Full range calf raises with a 4 second hold at the bottom (12 reps)

55lbs – Seated calf raises (30)

For the mathematicians out there… you say HEY that doesn’t equal 36… technically the seated calf raises at the end are not officially a part of the 36 special fun… But we do it anyways just BECAUSE WE CAN!

Meal Prep Monday! BUDGET EDITION!

Margaret and Hollie are students… which ultimately means we can’t afford to spend a billion dollars a week on food.. Not exactly ideal since we eat all day long everyday.

So!!! often (literally 9 times out of 10 this will happen) people will tell us “we can’t afford to eat healthy”…WELL! We’re here (once again) to the rescue for all those financially impaired individuals like us out there just trying to not eat garbage everyday just because it costs less.

This week we made PASTA (Can hear all the shocked gasps from the crowd of gluten free followers) … GLUTEN FREE PASTA! πŸ™‚ Since the winter months are still continuing to plague us (pretty over it at this point…) it means now we have to resort to pretending it’s spring… which is fine we have big imaginations! This big imagination resulted in pasta primavera! πŸ™‚ Classic spring pasta with beautiful colourful vegetables!


-Sliced portabello mushrooms

-Buttercup (or any other kind) squash


-1/2 Red Onion chopped

-2 Cloves garlic


-1/2 Cup Olive Oil

-2 Free Range Eggs

-1/2 Cup Organic Plain Yogurt (or plain greek yogurt)

-1/4 Cup Chopped Fresh Basil

-1 Clove of Garlic

-Salt & Pepper

INSTRUCTIONS (we have a tendency to make up recipes as we go…so we’ll do our best here)

-First of all you’ll want to roast the squash! πŸ™‚ – Cut the squash in half without cutting off any fingers or toes (at which point we will need to figure out why your feet are on the cutting board) and lay cut side up in a roasting dish at 400 degrees for 1 hour :)!

-Then!! Sautee garlic in olive oil over medium heat until browned, then add the red onion until translucent and then add the beautiful portabello mushrooms !


-After all this deliciousness is done it’s time to cook up the PASTA! (we used vegetable brown rice pasta – it’s all colourful and yummy) – to do this boil some water with a pinch of salt, add the pasta and cook according to the package !

-While the pasta is cooking time to make the sauce! – Add all the sauce ingredients to a food processor and pulse until creamy! (easy peasy)

-Once everything is complete add the pasta, the beautiful vegetables and the sauce all together and heat everything through!



-Red onion


-Buttercup squash

-Fresh Basil

-Container of yogurt

-Bag of pasta

-Portabello Mushrooms

-Bag of ground flax (totally unrelated.. just needed it..)

*All this (aka MEALS FOR A WHOLE WEEK) cost a total of 23.47! PROOF IT’S DOABLE! You just have to try πŸ™‚Β

We apologize for not being able to post as frequently as either of us would like… We’re pretty crazy busy and it has been more than normal lately…. busy for many people is just another word for stress. Β All people can see in the word busy is “not enough time for me” or “I’m missing out on that” … And we totally agree! Day to day it can get very taxing and result in a lot of anxiety issues and stress!Β 

These days it seems like we all have our own personal stress but then it gets put on us to get all cranked up about allllll the other problems happening all over the world (not that staying current is a bad thing)…it’s just a lot to take in in a day! Stress is a fundamental cause of a multitude of health disorders and conditions..it leaches nutrients from the body and basically ALL the fun… NO GOOD WE SAY!

SO!! Today… for something different (we’ve noticed that we’re very all over the place with our blog posts… we’re kind of all over the place in real life though too so it’s pretty accurate) we decided to just make a post about some of the HAPPY FEEL GOOD WARM AND FUZZIES in life πŸ™‚ Just as a little reminder that even if you’re having a bad day or week or month… there’s good out there. It really exists. Sometimes just knowing that makes a world of difference πŸ™‚

There’s a city called Belo Horizonte in Brazil that took a stand and decided enough was enough and they weren’t going to accept that their people would live in starvation and that children would go to school hungry every day. Β So they ended hunger. It’s such an inspiring story and really just induced awe that a city could come together for a common good…The world could use a solid dose of Belo Horizonte.

WARM AND FUZZY 2 (Just cause everything is better in twos)

This story came down the pipeline this morning in our local newspaper and it NEEDED to be shared… A gentleman in a wheelchair was feeding ducks in the river when his chair slid down the riverbank into the water (it’s cold up here in the great north aka Canada. THE WATER IS FLIPPIN COLD) so this 15 year old boy ran down and pulled him out of the water. Β Take away message: THERE IS HOPE FOR THE YOUTH OF THIS WORLD πŸ™‚Β 

We hope that we managed to invoke inspiration or at the very least a smile in some people today! Smiling is underestimated. Β There is more power behind a smile than most give it credit for… SO LETS SMILE MORE TODAY!

Hello ladies and gentlemen! Welcome to meal prep monday! πŸ™‚ Hope everyone’s weekend was superb and productive and what’s better than some good old fashioned preparation to start off the week right!?

As we mentioned in our newest addition to the “meet your noobs” section of our blog (aka our attempt at vlogging..emphasis on attempt) we are two students..which means limited funds. So! We make as much food as possible while using as little money as possible WHILE STILL all gluten free. I know you’re thinking wow. Hollie and Margaret are essentially culinary wizards and I can’t wait until I can be just like them.

Baby steps grasshopper… or something like that.


Today I returned to old faithful brown rice… I LOVE brown basamati rice.. I think the majority of love comes from how amazing it smells. Legit it’s the most aromatic grain you will ever find. PLUS nutritious… can you say DOUBLE BONUS.

For this week I made brown rice and threw in some lentils and black beans (they were on sale at the grocery store…best thing ever) as well as cherry tomatoes and some cucumber… odd combination but it’s what I had in the fridge..withhold judgement. THEN…just in case that didn’t sound delicious enough… I created a heavenly honey chipotle dressing that went on top… SO GOOD! … this made an absolutely obscene amount of food … which means perfect for me since I eat 24 hours a day.

For the honey chipotle dressing I just essentially threw ingredients in a bowl and whisked it together.

I used red wine vinegar and apple cider vinegar (about 1/2 cup)

Honey (about 1/4 cup) – If possible use local honey. Generally it’s pretty easy to find and always great to support your local everything πŸ™‚

A chipotle pepper minced super fine (basically paste level) and then throw in some of the adobo sauce deliciousness that goes with them

I then just added a couple pinches of dried basil, oregano and parsley!


I also recreated the muffins I made in a previous blog which are AMMAAAZING.. make them. Immediately. πŸ™‚




Meal Prep Monday!!

Once upon a time Hollie & Margaret had lives that didn’t revolve around school and work…that was a very long time ago. The number of hours we work in a week and the amount of studying and testing required of us… all out of our control. What we CAN control… is the food we get to eat for the whole entire week. And what better way to do that than to make it all at the beginning so it’s one less stressor throughout the week!

MPM march 4th


Ohhhhh man this week… I was feeling some asian persuasion! Discussing with Margaret what I was going to do I had pretty well decided on pad thai…Until I started actually cooking…. and when that happens it usually turns into me eating half the ingredients before I even use them and making something completely different from what I meant to. HOWEVER. I did end up with something in the ball park of pad thai!

I basically chopped some garlic, sauteed it in sesame oil, then added a can of coconut milk (ALWAYS INDUCES YUM FACTOR), some nutmeg, cardamom, curry powder, cumin and some crushed chili flakes

Then! I put some chopped sweet peppers (I used red and yellow), baby bok choy (THE CUTEST VEGETABLE EVER CREATED), and some shredded carrot and sauteed it with some coconut oil. I proceeded to make rice noodles (as per directions on the box… essentially this is the easiest thing to cook in the history of the universe. It’s literally fool proof)

This is the part where the magic happens:

“Sauce” + Beautiful Vegetables + Rice Noodles + Anything Asian = BOOM STIR FRY TYPE THING!

This ended with a GIANT batch of deliciousness… should keep me going the rest of the week! For snacks I still have a TON of hummus left from last week… and hardboiled some eggs (best snack of all time. Self-proclaimed) πŸ™‚ HAPPY EATING!


Due to extenuating circumstances resulting from previously mentioned over working Margaret’s component of this segment of MPM will be continued at a surprise time later in the week!!!
